Virgin Active Wellness Wednesday: What I've Been Eating

I've been getting quite a few requests recently for healthy recipes and my diet plan. The truth is, I really don't have any kind of set diet "plan". I'm really just experimenting. Finding out what keeps me full, what works, what doesn't...and I find new things to try on Pinterest every day! So here are a few pictures and recipes of what I've been eating. Let me know if you have any recipes that I should try!


Egg white omelet
Egg white omelet with spinach & feta, 1/2 and avo, cherry tomatoes


Salad in a jar
Found this idea on Pinterest. You layer the salad so that the leaves don't go soggy. Starting at the bottom, layer the harder ingredients like nuts, carrots, celery etc and work your way up to the leaves.
From the bottom up: balsamic & olive oil, almonds, roast butternut, carrots, red onion, broccoli, cauliflower & beetroot, salad leaves, feta.


Cannellini Bean Salad
Cannellini beans, red onion, cherry tomatoes, carrots, celery, cucumber, salad leaves, olive oil & red wine vinegar


Fruit Smoothie
Orange, strawberries, kiwi, flax seeds, ice


Pastrami Sandwich
Pastrami & mustard on rye, kiwi, strawberries


Smoked Salmon Salad
Mixed salad (leaves, cucumber, tomato, red onion), smoked salmon, avo, fat free cottage cheese, capers, olive oil, lemon juice

Last night I made the most amazing post-run smoothie but I didn't take a picture. It was so delicious I haven't been able to stop thinking about it! In fact, I want to go for a run right now just so that I can have one!

Post-workout Smoothie
Frozen banana, sugar free peanut butter, coconut flakes, rice milk.
AMAZING!
